Why Chia?
Chia seeds are packed with nutrients and antioxidents.
They are home to Mexico and Guatamala. I am so grateful for Mexico’s gift. It is something I cherish about this country and it is abundance of fresh and organic produce.
Dating all the way back to the Aztec and Mayan cultures, they believed chia offered them energy as chia meant ‘stregnth.’
Theres no wander why today chia seeds are considered a superfood, along with blueberries and another one of Mexico’s favourite, avocados. yum!
Now, do not be fooled by the tiny size of these black and white seeds.
Chia seeds contain Omega 3, the fatty acid that the heart, brain and skin requires for it to function at it’s best. So, why not ditch the salmon for chia.
They are also full of calcium. Actually with only two tablespoons, chia contains 5 times more calcium than milk.
Chia seeds are an excellent source of fibre and aid in weight loss as they keep you fuller for longer.
By letting them soak, they create a gel like consistancy, causing it to digest much slower.
About this Recipe
Start the morning with this delicious Mango chia pudding.Â
The Chia Pudding Recipe
- 1/2Â Â Mango
- 2 tbsp chia seeds
- 1/2 cup plant based milk- coconut or almond
- 1 tsp agave syrup or honey
- 1/4 tbsp  vanilla extract or 1/4 vanilla bean
- Small handful of pistachios or almonds
- Pinch of salt to taste (optional)
Step 1
The night before, prepare your delicious chia pudding.Â
Step 2
Combine all the ingredients, except for the nuts and salt together. Make sure you mix well.
Step 3
Place the mix in the fridge overnight.

Step 4
In the morning, you should have a very jelly, gel-like consistency.
Finely chop nuts and sprinkle on top of the pudding with a pinch of salt to taste.
Step 5
Enjoy this fresh and delicious breakfast, packed with protein and everything so beautiful and nourishing for your body.
Alternatives
The beauty of this recipe is that there is no one right way of doing it.Â
Experiment with other foods or condiments that are rich in antioxidants such as blueberries, or cinnamon. Or why not all of them together.Â
For another great option, try adding 2 teaspoons of matcha green tea powder along with your fruit.Â
Ohhhh… the matcha brings me back to my days sitting in a gorgeous cafe in Kyoto, Japan drinking my delicious matcha green tea. Yum.
